- Ingredients for pancakes
- 2 cups Bisquickbaking mix
- 1/2 teaspoon cinnamon
- 1 egg
- 1-1/3 cups milk
- 3/4 cup grated apple
- Ingredients For Cider Sauce:
- 1 cup sugar
- 2 Tablespoons corn starch
- 1/4 teaspoon cinnamon, 1/4 teaspoon nutmeg or 1/2 teaspoon pumpkin pie spice
- 2 cups apple cider
- 2 Tablespoons lemon juice
- 1/4 cup margarine or butter
For pancakes:Beat baking mix, cinnamon, egg and milk with a rotary beater until smooth. Stir in apple. Grease griddle if necessary. Pour batter by 1/4 cup measuring cupful onto hot griddle. Bake until bubbles appear; turn. Bake until golden brown. Serve with warm cider sauce; if you wish top with sour cream. Makes eighteen 1/4-inch pancakes.
For Cider Sauce: In saucepan, mix cornstarch, cinnamon and nutmeg; stir in apple cider and lemon juice. Cook, stirring constantly, until mixture thickens and boils. Boil one minute and remove from heat. Stir in butter. Makes about 2-1/2 cups.
While hot cakes bake, make sausage patties. Place patties in a cold skillet an add 2 to 4 tablespoons water. Cover and simmer 5 to 8 minutes. Remove cover and cook until well done, turning to brown evenly.
