Ingredients
4 kg | plums, washed, pricked with a fork |
1.2 kg | sugar |
240 ml | vinegar |
1 tsp | ground cinnamon |
1 tsp | ground allspice |
½ tsp | ground cloves |
Instructions
Place plums in a large pot. Combine sugar, vinegar, and spices in a saucepan and boil for 5 minutes. Pour syrup over plums and let stand for 24 hours. Drain syrup from plums and reheat again the next day. Pour over plums again tand let stand for 24 hours.The third day, drain plums and set aside syrup.
Pack the plums into hot jars, leaving a bit of head space. Fill jar with boiling hot syrup. Wipe jar rims and adjust lids. Process 15 minutes in a boiling water bath.
