Roasted peppers on toast recipe details
Ingredients
1 | green bell pepper, seeded, sliced |
1 | red bell pepper, seeded, sliced |
1 | yellow bell pepper, seeded, sliced |
240 ml | olive oil |
60 ml | balsamic vinegar |
1 | french bread, baguette |
2 clove(s) | garlic, minced |
Parmesan cheese, grated | |
salt and pepper, to taste |
Instructions
Broil bell peppers under broiler until charred on all sides, about 10-15 minutes, turning frequently. Remove from broiler and season with salt and pepper.Combine garlic and 120ml olive oil and place peppers lices in marinade for 30 minutes.
Preheat oven to 180°C.
Cut bread into slices and brush slices with remaining 120ml olive oil. Place pepper slices on top and sprinkle with cheese.
Bake 15-20 minutes, until nicely toasted.
