An ancient method of preserving fruit, enjoyed by Roman emporers and Greek philosophers alike. In the Netherlands, guys will spread this on bread with a slice of cheese.

Ingredients
Serves: 4- 8 apples, peeled and chopped
- 1 1/2 cups apple cider
- 1/3 cup packed brown sugar
- 1/3 cup dark molasses
- 2 1/4 teaspoons ground cinnamon
- 3/4 teaspoon ground nutmeg
- 1/2 teaspoon groudn cloves
- 1/4 teaspoon ground ginger
- 3/4 cup golden raisins
- 1/2 teaspoon lemon zest
Preparation method
Prep: 10 mins | Cook: 2 hours | Extra time: 1 hour, cooling1. Combine everything but the raisins and lemon zest in a saucepan and set over high heat. When mixture boils, turn heat down to low.
2. Cook for about 2 hours, stirring every 5 to 10 minutes or so, until the sauce thickens well. Then add raisins and lemon zest and cool for at least 1 hour. Serve.
