Ingredients

1 kg carrots
4 large potatoes
1 cup(s) peas, cooked
2 tbsp parsley, chopped
salt and freshly ground black pepper
1  lemon juice
4 clove(s) garlic, sliced
2 tbsp oil

Instructions

Cook the carrots in salted water until done. Drain and collect the cooking water. Cook the potatoes until done. Drain, peel and slice the potatoes and transfer into a bowl. Slice half of the carrots and add to the potatoes, together with the peas and the parsley.

In a food processor purée the remaining carrots with the lemon juice, garlic, a pinch of salt, a generoeus pinch of pepper and the oil. Pour in some of the cooking water, if the sauce is too thick.

Add the carrot sauce to the vegetable salad and toss gently. Season to taste with salt and pepper. Allow to soak for 2 hours before serving.
