Ingredients
750 g | potatoes |
3 clove(s) | garlic, minced |
1 | red chili pepper, chopped |
2 | red bell peppers, sliced |
10 tbsp | olive oil |
salt and pepper | |
1 tsp | ground cumin |
3 tbsp | sherry vinegar |
Instructions
Cook the potatoes in salted water until almost tender, then drain and allow to cool completely. Cut the potatoes into wedges.In a pan, heat the oil and fry the potatoes until golden brown. Add the bell peppers, garlic and chilies and cook for 3-4 more minutes. Season to taste with salt, pepper and cumin.
Drizzle over the vinegar and cook until the liquid has evaporated. Serve immediately.
