Ingredients
Serves: 4- 1 tablespoon olive oil
- 1 medium onion, coarsely chopped
- 2 cloves garlic, chopped
- 1 small green bell pepper, seeded and coarsely chopped
- 1 small tomato, seeded and coarsely chopped
- 1 roasted red bell pepper, seeded and coarsely chopped
- 2 small cooked potatoes, diced into 1/2-in. pieces
- 1/2 tsp salt
- 4 large eggs, lightly beaten
Preparation method
Prep: 10 mins | Cook: 15 mins1. Heat 2 teaspoons oil in a skillet over medium heat. Cook onion and garlic in hot oil for 5 minutes, then add green pepper and tomato and cook for 3 more minutes. Stir in roasted pepper, potatoes, and salt. Cook, covered, for 10 minutes. Stir occasionally.
2. Spray a second nonstick skillet with cooking spray and place over medium heat. Pour in 1 teaspoon oil. Pour beaten egg mixture into the skillet; do not stir, but allow the mixture to set. As the edges begin to set, lift them up to let the uncooked egg run underneath.
3. When the eggs have set completely, carefully transfer to a plate and pour the cooked vegetables on top. Quarter and serve.
