Ingredients
4 tbsp | olive oil |
1 medium | onion, chopped |
125 g | tomatoes, , peeled, seeded ann chopped (fresh or canned) |
1 tbsp | tomato paste |
125 ml | dry white wine |
250 ml | fish stock or bottled clam juice |
salt and fresh ground pepper, to taste | |
1 kg | clams, well scrubbed |
2 clove(s) | garlic, minced |
2 tbsp | fresh parsley, chopped |
Instructions
In a frying pan warm 2 tablespoons of the oil. Add the onion and sauté, until it begins to turn golden. Add the tomatoes and tomato paste and continue to sauté, until thickened. Add the wine and cook uncovered until reduced by half. Add the fish stock and cook uncovered until thickened. Remove from the heat and cool slightly.In a blender, puree the tomato mixture. Season with salt and pepper.
In a large frying pan heat the remaining 2 tablespoons of oil. Add the garlic, parsley and clams, cover and cook, shaking the pan periodically, until the clams open, 3-5 minutes depending upon size. Discard any unopened clams. Transfer the clams to a platter and keep warm.
Add the pureed tomato mixture to the same pan and boil uncovered until reduced by one-fourth. Add the clams and mix well. Transfer to shallow bowls and serve with baguette.
