Pasta with chorizo and olives recipe details
Ingredients
500 g | pasta |
230 g | chorizo, sliced |
50 g | green olives |
50 g | black olives |
1 pinch(es) | saffron |
2 tbsp | basil |
2 | egg yolks |
salt and freshly ground black pepper, to taste | |
1 tbsp | butter |
230 ml | single cream |
1 pinch(es) | nutmeg |
150 g | Parmesan cheese |
Instructions
Cook the pasta in salted water until al dente.Melt the butter in a saucepan, add the chorizo slices and olives and fry until crispy. Pour in the single cream and heat over medium heat until almost boiling. Add cooked pasta and season to taste with salt, pepper and nutmeg. Add the egg yolks, saffron and basil, toss and cook for another minute.
Mix in the Parmesan cheese and serve on heated plates.
