Ingredients

25 g	pine nuts
2 tbsp	olive oil
2 clove(s)	garlic, finely sliced
1 glass(es)	wine, red or white
1	tin of sardines in oil or brine, drained
	chopped parsley
150 g	spaghetti
	salt and freshly ground black pepper, to taste

Instructions

Cook the spaghetti al dente. Drain, do not rinse. Dry fry the pine nuts until golden, and reserve.

In the same pan, heat the oil and fry the garlic for one minute, then add a large glass of wine and reduce by half. Add the parsley, sardines and seasoning. Cook for about three minutes, stirring. Toss with the drained spaghetti, sprinkle with pine nuts and serve.

You can add a few whole cherry tomatoes if you have them for the final cooking, just to heat through.

About this recipe:
A recipe I found when we bought a rather large bulk pack of tinned sardines – we had to do something with them! It was also part of the high speed cooking experiment.
