Mashed potatoes with onion butter recipe details
Ingredients
1 kg | potatoes |
2 cup(s) | milk |
3 tbsp | butter |
75 ml | single cream |
salt and pepper | |
1 | onion, finely chopped |
2 tbsp | melted butter |
freshly ground nutmeg | |
1 tbsp | parsley, chopped |
Instructions
Cook and peel the potatoes. Press through a potato ricer into a bowl.In a small saucepan combine the melted butter with the chopped onion. Cook over medium heat until the onion is golden brown.
In a saucepan, bring the milk almost to a boil. Add to the the mashed potatoes together with 3 tablespoons of butter and a good pinch of salt. Whisk until foamy. Add the cream and season to taste with salt, pepper and nutmeg.
Pour the onion butter over the mashed potatoes. Sprinkle with parsley and serve.
