Spaghetti with Broccoli Sauce recipe

Ingredients
600 g | broccoli |
400 g | spaghetti |
salt and freshly ground black pepper | |
1 | onion, chopped |
1 clove(s) | garlic, minced |
2 tbsp | butter |
2 tbsp | flour |
200 g | single cream |
100 g | bacon, diced |
nutmeg | |
dried Italian herbs |
Instructions
Cook the broccoli in salted water for 4-5 minutes or until done, but still a bit firm to the bite. Drain and collect 350 ml of the cooking liquid. Cook the pasta in salted water until al dente.
In the meantime melt the butter. Sauté the onion and the garlic until lucent. Dust with the flour and cook stirring until pale yellow. Pour in the cooking liquid and the cream and bring to a boil, stirring constantly with a wire whisk. Reduce the heat and simmer for 5 minutes, stirring frequently. Stir in the broccoli and cook until the broccoli is heated. Season to taste with salt, pepper, Italian herbs and nutmeg.
Fry the bacon until crispy. Drain on kitchen paper.
Drain the cooked pasta, add to the broccoli sauce and toss gently. Serve sprinkled with the bacon.
