Ingredients
500 g | spaghetti |
salt and freshly ground black pepper | |
50 g | ginger, grated |
3 | shallots, chopped |
2 | carrots, sliced |
1 bunch(es) | cilantro, chopped |
2 tbsp | olive oil |
200 ml | dry white wine |
200 ml | single cream |
100 g | unsalted peanuts, chopped |
Instructions
Cook the spaghetti in salted water until al dente.In a saucepan, heat the oil. Cook the shallots over medium heat until soft. Pour in the wine and the cream and cook until slightly thickened. Stir in the ginger and season to taste with salt and pepper.
Blanche the carrot slices in salted water for 3-4 minutes. Toast the peanuts until slightly golden.
Drain the cooked pasta, place into a warmed bowl and add carrots and peanuts. Mix the ginger sauce with a hand blender until frothy. Pour over the pasta and toss.
Serve immediately, garnished with the cilantro.
