Ingredients
250 g | bacon, preferably Italian pancetta, diced |
60 ml | olive oil |
450 g | spaghetti |
4 | eggs |
200 g | freshly grated Pecorino cheese |
salt and freshly ground black pepper |
Instructions
Cook the spaghetti in plenty of salted water until al dente.I a skillet, cook the bacon over medium heat until golden brown and crisp, stirring frequently. Add olive oil.
Drain the pasta and return to the pot, heat switched off. Add the hot bacon mixture and toss. Add the eggs and the cheese and toss for another minute until the eggs are nearly cooked by the hot pasta.
Serve on warmed plates, sprinkled with freshly ground black pepper.
