Ingredients
500 g | black squid ink Spaghetti, or any other Spaghetti |
1 large can(s) | anchovy fillets in oil |
400 g | beef tomatoes, chopped |
1 glass(es) | tomato sauce |
1 | onion, chopped |
4 clove(s) | garlic, chopped |
2 | red chili peppers |
500 g | fresh shrimp, peeled, black vein removed |
salt and pepper | |
paprika powder | |
1 bunch(es) | parsley, chopped |
some | freshly grated Parmesan cheese |
200 g | ricotta cheese |
oil for cooking |
Instructions
Heat some oil in a wide pan, add the anchovy fillets and fry them, pressing them down and stirring with a wooden spoon until they almost have melted. Add the onion, garlic and chili peppers and fry for another 3-5 minutes. Now add the chopped tomatoes and the tomato sauce. Cook for 20-30 minutes, stirring occasionally. Season to taste.Meanwhile cook the spaghetti in salted water. Add the shrimp to the sauce and cook until just pink and done. Drain the spaghetti reserving an espresso cup of cooking water for the sauce. Add this to the sauce and add as well the spaghetti. Mix well and serve sprinkled with Parmesan, parsley and some Ricotta cheese.
