- Ingredients:
- Two 7-ounce cans chopped mild green chiles
- 6 corn tortillas, cut into 3/4-inch strips
- 12 ounces regular or spicy sausage, cooked and drained
- 1 pound Jack cheese
- 8 eggs
- 1/2 cup milk
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic salt
- 1/4 teaspoon onion salt
- 2 tomatoes, sliced very thinly
- Paprika
- Sour cream
- Salsa
Day Prior: Butter a large baking dish (13 x 9 inches). Layer half the chiles (one of the cans), half the tortilla strips, half the sausage, and end with half the cheese. Repeat the same sequence again and top with thinly sliced tomatoes. In a medium-sized bowl, beat eggs, milk, and spices. Pour over casserole and sprinkle with paprika. Cover with plastic wrap and store in refrigerator overnight.
Next day:Preheat oven to 350 degrees (we preheat ours to 425). Remove plastic wrap and bake casserole for 50 minutes or until set in center and edges are lightly browned. Serve with a dollop of sour cream and salsa on the side.
