Nachos surf-style, with shrimp and the Southwestern flavor of ancho chile powder. Not too spicy, you should be able to serve this to any guy who drops by during the game. Inspired by Luke’s “Creamy Southwest Dipping Sauce.”

Ingredients
Serves: 6- 1 bunch cilantro, minced
- 1/2 sweet yellow onion, chopped
- 1/2 red bell pepper, chopped
- 5 cloves garlic, minced
- 16 ounces cream cheese, softened
- 3 tablespoons white wine
- 3 tablespoons lime juice
- 1 tablespoon ancho chile powder
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
- 1/2 teaspoon black pepper
- 1 pound cooked medium shrimp, peeled and tails removed
- 2 cups shredded Cheddar cheese
Preparation method
Prep: 15 mins | Cook: 5 mins1. Combine cilantro, onion, bell pepper, garlic, cream cheese, wine, lime juice, chile powder, salt, red pepper, and black pepper together in a bowl.
2. Preheat broiler to high. Line a large (11×17) baking sheet with aluminum foil.
3. Arrange half of the tortilla chips in one layer on the baking sheet. Spoon on half of the cheese mixture; sprinkle with half the shrimp, and top with half of the shredded cheese.
4. Repeat layers with remaining ingredients.
5. Broil about 4 inches from the heat source for about 3 minutes to melt the cheese and brown the top layer slightly.
