southwest quiche recipe details
- Ingredients:
- 1/4 pound bacon or ham bits (or both), crispy fried
- 1 medium onion, diced
- 1 garlic clove, minced
- One 4-ounce can chopped chiles (about 2 or 3 roasted and peeled fresh Anaheim or Poblano chiles)
- 1/2 pound grated Swiss cheese, about 2 cups
- 1/2 cup grated Parmesan cheese
- 4 beaten eggs
- 1/2 cup milk or half & half
- 1/4 teaspoon dried thyme (3/4 teaspoon fresh)
- One 9- or 10-inch pie shell, partially baked
Preheat the oven to 375 degrees. Using 1 Tablespoon cooking oil or the drippings of the fried bacon and/or ham bits, saute the onion and garlic over medium heat until the onion begins to brown. Drain on paper towel, and distribute evenly over the bottom of the partially-baked pie crust, along with the bacon and/or ham. Sprinkle the grated Swiss cheese over the onion and bacon and then layer chiles and Parmesan cheese. Mix the eggs, milk or half and half, and thyme and pour over the top of the cheese and chiles layers. Bake in a preheated oven for 45 minutes or until browned. Allow to rest about 20 minutes before serving.
