|350 g||Parmesan cheese, grated|
|salt to taste|
|olive oil for deep frying|
Cut Zucchini into wide strips.
Pour olive oil into a large frying pan to reach a depth 5 cm.
Take a medium bowl and stir in the Parmesan, breadcrumbs, and salt.
Whisk the eggs in another medium bowl to blend.
First dip the zucchini in the eggs to coat completely and allow the excess egg to drip back into the bowl. Then coat the zucchini in the breadcrumb mixture and place the zucchini strips on a baking sheet. Work in batches.
Heat up the oil and fry the zucchini sticks until they are golden brown for about 3 minutes. Transfer the fried zucchini to paper towels and drain.
Sprinkle with the remaining Parmesan and serve.
