The ingredients used in this recipe come together to make a very tasty version of fried okra. It doesn’t have a lot of ingredients, takes no time to prepare and cook and is quite simple.

Ingredients
Serves: 8- 20 Pods fresh Okra, sliced into 1/4 inch pieces
- 6 (or more) Medium sized Yukon Gold potatoes, cut in 1 inch squares
- 2 Large sweet yellow onions, chopped in large pieces
- Corn Meal with sugar already added (such as Jiffy brand)
- Vegetable Oil
Preparation method
Prep: 20 mins | Cook: 45 mins1. After cutting okra, put them in a colander and rinse with cold water. Set aside in a large bowl for mixing. Do the same with the potatoes and onions. Then add to the bowl with the okra. In this next step, use your best judgment. Add enough corn meal to coat all of the vegetables in the bowl. Toss lightly till vegetables are coated with corn meal to your desire, adding more corn meal if necessary.
2. In a frying pan, pour in oil to cover bottom of the pan and heat over medium to medium high. To test if oil is ready, wet your fingers with some water and flick into oil. If the oil sizzles immediately, it is ready to cook. Spoon out vegetables into frying pan, just covering bottom of pan. When vegetables turn golden brown on bottom, flip them over and repeat. Remove from frying pan to another bowl lined with paper towels to drain oil. Repeat process till all vegetables are cooked.
