Ingredients
Serves: 12- 2 cups cake flour, plus more for flouring pan
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup butter
- 1 1/2 cups white sugar
- 8 egg yolks
- 2 teaspoons vanilla extract
- 3/4 cup milk
- 3 (8 ounce) cans crushed pineapple, drained, juice reserved
- 2 (14 ounce) cans sweetened condensed milk
- 1 (8 ounce) container Cool Whip(R)
- 1/2 cup shredded coconut, optional
- 12 cherries with stems
Preparation method
Prep: 15 mins | Cook: 35 mins | Extra time: 1 hour, cooling1. Preheat oven to 350 degrees F. Grease and flour 9×13-inch pan.
2. Sift together the flour, baking powder and salt. Set aside.
3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks one at a time. Stir in the vanilla.
4. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
5. Pour batter into prepared pan. Bake in the preheated oven for 21 to 30 minutes, or until the top springs back when lightly tapped. Cool 15 minutes.
6. Using a straw, poke holes approximately 1 1/2 inches apart over whole cake.
7. Whisk the pineapple juice and sweetened condensed milk together in a saucepan, then bring to a low simmer over medium heat. Stir constantly.
8. When mixture is simmering, use a turkey baster to insert mixture in every hole in the cake until it overflows.
9. Spread pineapple chunks over cake and refrigerate to cool completely.
10. Once cooled spread Cool Whip(R) over the cake, then cover with coconut (if using). Arrange cherries so that every piece of cake has one.
