Ingredients1. Chicken cut up (1)
2. curry powder (1tbsp or to taste)
3. turmeric (1/2tsp)
4. minced ginger (1tsp)
5. minced garlic (1tsp)
6. diced onions (2med.)
7. cumin seeds (1/2tsp)
8. cinnamon stick (1 about 2” piece)
9. fennel (1tsp)
10. cardamom pods (3)
11. ghee or oil (3tbsp)
12. tamarind (1 about 1” square piece)
13. diced tomato (4small)
14. hot spicy mix or garam masala (1tbsp)
15. coconut milk (1/2c)
Method of preparation
1. Take a frying pan, heat oil in it. Add cumin seeds, fennel, cinnamon and cardamom pods in it. Fry them for about 1 to 2 minutes and then add onions in it and cook them until they get wilted.
2. Turn down the heat and add ginger and garlic in it and saute them for about 2 to 3 minutes. Then add curry powder, tamarind extract, coconut milk, garam masala, tomato, chicken and turmeric in it and then keep this mixture to boil.
3. Turn down the heat, cover the pan and keep it to simmer until the chicken gets cooked and the gravy gets thickened. When it gets ready then serve it hot with rice.
To make tamarind extract –
Soak tamarind in water for 2 hours. To extract the juice, crush it with the help of fingers and then threw the seeds and pith. Use this extract in the recipe.
