Ingredients

150 g sorrel
1 small onion
2 tbsp butter
1 tbsp flour
1 l vegetable stock
200 g single cream
1  egg yolk
salt and black pepper
200 g shrimp, cooked and rinsed

Instructions

Wash the sorrel and drain well. Set some of the leaves aside, chop the remaining. Finely chop the onion.

In a skillet, sauté the onion and the chopped sorrel in butter, dust with flour and cook stirring until pale yellow. Deglaze with the vegetable stock and simmer over low heat for 20 minutes. Process the soup briefly with a hand blender.

Whisk the single cream until stiff. Cut the remaining leaves into thin strips. Remove the soup from the heat and stir in the egg yolk and the whipped cream. Season to taste with salt and pepper.

Evenly divide the shrimp into the soup plates. Ladle the soup over the shrimp and garnish with sorrel stripes.
