Ingredients
4 | trouts, ready to cook |
some | tarragon, chopped |
4 | shallots, sliced |
2 glass(es) | white wine |
salt and pepper | |
soft butter, for the saucepan | |
ice-cold butter, for the sauce |
Instructions
Season the trouts inside and outside with salt and pepper. Place them side by side into a large buttered saucepan. Add the shallots and sprinkle with tarragon. Pour over the white wine. Cook over low heat for 8 minutes. Turn the fishes and cook for another 4 minutes.Remove the trouts, cover and keep warm. Strain the sauce, return to the saucepan, add some ice cold butter and cook stirring until the sauce has thickened. Season to taste with salt and pepper.
Arrange the trouts on serving plates and serve with the sauce.
