Ingredients

4 medium eggs
400 medium coconut milk
2 medium onions, finely chopped
½ tsp turmeric powder
½ tsp cumin seed powder
½ tsp coriander powder
2 tbsp coriander leaves, minced
salt, to taste
oil

Instructions

Heat the oil in a pan and fry the onions till they are golden brown. Add seasoning, stir well, then season with salt.

Make four hollows in the onion mixture and drop a raw egg into each hollow. Pile the cooked onion th eggs. Cover the pan and simmer until the eggs poach.

Pour the coconut milk over the eggs and simmer until the milk thickens. To serve sprinkle with coriander leaves.
