Ingredients
Serves: 4- 1 pound ground beef
- 1/2 cup finely chopped onion
- 2 tablespoons chopped green chiles
- 1 (16 oz) can refried beans
- 1/2 cup water
- 1 Tablespoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 8 burrito-size flour tortillas
- 1 (10-3/4 ounce) can cream of mushroom soup
- 8 ounces sour cream
- 8 ounces Cheddar/jack cheese mixture, grated
Preparation method
Prep: 30 mins | Cook: 30 mins1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
2. Heat a large skillet over medium-high heat. Stir ground beef, chopped onion and chopped chiles into skillet. Cook and stir until beef is browned and vegetables are soft. Drain excess fat and return to skillet.
3. Stir water and seasonings into the beef mixture. Bring to boil and reduce to simmer. Mix in the refried beans, and cook until thoroughly heated.
4. In a bowl, mix sour cream and soup.
5. One by one, fill tortillas with beef/bean mixture. Roll tortillas up, folding in sides as you go. Place in prepared baking dish.
6. Cover burritos with the sour cream/soup mixture.
7. Bake in preheated oven for 20 minutes. Remove dish from oven and sprinkle burritos with the Cheddar/jack cheese. Bake until the cheese is melted, about an additional 10 minutes.
