Ingredients
Serves: 8- 1/2 pound bacon(rough chop)
- 5 stalks of celery(medium dice)
- 1 medium onion(medium dice)
- 2 carrots(medium dice)
- 3 cloves of garlic(minced)
- 3 medium potatoes(medium dice)
- 1/2 tsp chipotle flakes
- 4 tbsp butter
- 4 tbsp corn starch
- 15 oz can sweet corn(drained)
- 15 oz can creamed corn
- 1 pound andouille sausage(medium dice)
- 1/2 tsp thyme
- 1/2 tbsp oregano
- 1 quart low sodium chicken broth
- 1 tsp paprika
- 3 fresh bay leaves
- 1 cup whole or 2% milk
- salt and pepper to taste
Preparation method
Prep: 15 mins | Cook: 30 mins1. Place the bacon in a large pot over medium-high heat, and cook until crisp. Drain well, reserving about 2 tablespoons drippings in the pot.
2. Add celery, onions, carrots, garlic, potatoes and chipotle flakes to the pot and cook until onions are clear.
3. While waiting, melt butter in a microwavable bowl. Mix in corn starch very well and set aside.
4. Add both cans of corn, sausage, thyme and oregano and simmer for 10 minutes.
5. Add chicken broth, paprika and bay leaves. Bring to a boil.
6. When the soup reaches boiling point add milk and butter & starch mixture and bring back to a boil.
7. Add salt and pepper to taste and serve.
