Orange cr me brul e recipe details
Ingredients
5 tbsp | orange juice |
1 tsp | grated orange peel |
200 g | single cream |
175 ml | milk |
pulp of a vanilla pod | |
3 | egg yolks |
2 | eggs |
100 g | sugar |
6 tsp | sugar |
Instructions
In a saucepan combine the orange juice, orange peel, cream, milk, vanilla pulp and 100g of sugar and bring to a boil.Whisk the egg yolks and the eggs, then stir into the cream mixture. Preheat the oven to 120°C. Pour the mixture into 4 ramekins. Place the ramekins into casserole dish, filled to the half with water. Bake for 1 hour. Allow to chill, then place in the fridge for 12 hours.
Sprinkle the top of the crème with a teaspoon of sugar each. Caramelize the sugar with a kitchen torch or a Bunsen burner and serve.
