The spicy, smoky flavor of chipotle flavors this easy and quick ground chicken chili. Here’s a fun fact for ya: A “chipotle pepper” isn’t a different type of pepper, but is really just a jalapeno pepper that’s been smoked.

Ingredients
Serves: 4- 2 tablespoons olive oil
- 2 pounds ground chicken
- 2 carrots, chopped
- 4 stalks celery, finely chopped
- 1 onion, chopped
- 4 cloves garlic, chopped
- Salt and pepper
- 1 (7 ounce) can chipotle chiles in adobo sauce
- 1 (15 ounce) can tomato sauce
- 2 cups chicken broth
- 2 cups thin tortilla chips, crushed
- 1 cup shredded pepper Jack cheese
- 3/4 cup crumbled blue cheese
Preparation method
Prep: 10 mins | Cook: 30 mins1. Pour olive oil into a large soup pot and set over medium-high heat. Cook chicken in hot oil for about 8 minutes, until chicken is no longer pink.
2. Stir in carrots, celery, onion, garlic, and salt and pepper to taste. Cook for about 10 more minutes, until carrots are tender.
3. Scoop out the chipotle peppers and adobo sauce into a food processor. Pulse until smooth. Pour 2 tablespoons into a bowl and store the rest in a plastic resealable bag for another recipe.
4. Add tomato sauce to the 2 tablespoons chipotle puree. Stir well. Add to the vegetables and chicken in the skillet, along with the chicken broth. Cook for 5 minutes.
5. Serve chili topped with tortilla chips and cheese. Serve.
