Smokey Cheddar Potato Soup recipe

- Ingredients
- 1/4 cup butter
- 1 onion, diced
- 3 stalks of celery, diced
- 2 cans of chicken stock
- 4 cups of potato, peeled and diced
- 1 can cream of chicken soup
- 1 Tablespoon liquid smoke
- 1 cup of cheddar cheese, shredded
Instructions:
This is a good cold weather soup to warm up the bones. I started serving this to the crew of friends that helped sheetrock the Inn while we were renovating. I love to serve hungry men, and they seemed to really love this soup. The smokey flavor makes it different.
The Inn is busiest in the winter, I think because people like the idea of cozying up in a country inn when it is cold outside. During the holidays we decorate every room with its own Christmas tree. The Inn is all dressed up in its finest, it really is a glorious time to visit the Inn.
Brown onion and celery in butter in large dutch oven pan. Add chicken stock and soup along with potatoes. Add water to completely cover the potatoes. Cook ’til potatoes are tender. Add liquid smoke and cheddar cheese just before serving. Stir to melt cheese. I like to give it a few dashes of Tabascopepper sauce, too.
