Ingredients
4 large | smoked pork chops |
4 | juniper berries, crushed |
salt and freshly ground black pepper | |
250 g | shallots, sliced |
2 tbsp | butter |
200 ml | elderberry juice |
200 ml | vegetable stock |
200 g | chestnuts, peeled |
100 g | prunes, halved and stones removed |
Instructions
Rub the smoked pork chops with pepper and crushed juniper berries. In a saucepan, melt the butter and sauté the shallots. Add the meat and fry for 3-4 minutes, turning once. Pour in the juice and the stock, cover and simmer over low heat for 20 minutes.Add the prunes and the chestnuts and cook for 25 more minutes. Check seasoning and correct if necessary.
Serve with mashed potatoes.
