The football games are over, the family’s gone, the dishes are piled in the sink. Yup, Thanksgiving’s over. Time to deal with the leftovers. Here’s a simple, tasty soup for what’s left of your turkey.

Ingredients
Serves: 10- 16 cups water
- 1 turkey carcass (leg bones, wings, neck included)
- 1/2 teaspoon freshly ground pepper
- 1 cup dry white rice
- 2 large carrots, shredded
- 1 tablespoon liquid smoke
- 1 cup lemon juice
Preparation method
Prep: 10 mins | Cook: 1 hour 30 mins1. Put the turkey carcass and water in a large soup pot. Bring the water to a boil and simmer until all meat falls off bones. This will take at least 1 hour.
2. Remove all non-meat turkey parts. What’s left is broth! Strain through colander into another soup pot to ensure all bones are removed. From the bones you’ve taken out, pick off any remaining meat from bones and place into the pot of broth.
3. Bring the broth back to a boil and add the carrots, rice, pepper, liquid smoke, and lemon juice. Simmer until rice and carrots are cooked, about 30 minutes.
