Instructions
Remove the head and season the smelt with salt and pepper (Northern European style). Flour and pan-fry the fish.The fish bones are so tiny that they do not have to be removed and the same goes for the tail.
Eat the Smelt with your hands (Northern European style) serve with the potato salad that you can also find in my profile.
