Ingredients
400 g | medium shrimps |
200 ml | olive oil |
½ small | onion, finely chopped |
½ small | carrot, finely chopped |
½ small | celery, finely chopped |
100 ml | white wine |
Instructions
Cut off or remove the heads of the shrimps and reserve! Cut off or remove the tiny legs on the bottom side of the shrimp and discard. Peel the hard outer shell and discard.Take a baking dish and pour 150 ml oil inside to cover the bottom and place shrimps on top.
Preheat oven to 200°C.
While the oven is heating up take a small frying pan and fry the onion, carrot and celery together with 50 ml oil. Fry on low heat until soft.
Pour fried vegetables over the shrimp and also add the white wine. Now take the reserved shrimp heads and squeeze their juice using a two handle potato masher over the shrimp in the baking pan. This juice adds great flavour.
Place in oven and bake for about 10 minutes.
Serving suggestion:Serve with baby potatoes in winter or a fresh salad in summer.
