Ingredients
For the dough: | |
150 g | flour |
80 g | cold butter |
½ tbsp | salt |
3 tbsp | cold water |
For the Filling: | |
200 g | Raclette cheese or any other strong cheese like Gruyere or Appenzeller, grated |
100 g | bacon bits |
150 g | Ricotta cheese or Quark |
3 | eggs |
2 tbsp | flour |
salt | |
pepper | |
nutmeg | |
paprika |
Instructions
For the pastry:
Mix all the ingredients together and knead quickly into a dough. Cool in the fridge for 30 minutes. Roll out the dough and cut into circles slightly bigger as the baking dishes. Line the dishes with the dough and prick with a fork.
Mix all the other ingredients together and fill the pastry dishes. Bake at 180°C for approximately 30 minutes. This amount of filling can fill one normal size pie dish, if you don’t want to make individual ones.

In Switzerland there are many recipes for cheese pies, each town or region has it’s own. This is a very easy recipe which can be the base of your own creation. Add Gorgonzola cheese or blue cheese, add Onion or garlic, add tomatoes or any vegetable.
