Ingredients
Serves: 12- 1 (10 3/4 ounce) can condensed broccoli cheese soup
- 1 cup cottage cheese
- 1 cup sour cream
- 1 (28 ounce) package frozen O’Brien potatoes, thawed
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/2 pound Canadian bacon, chopped
- 1/4 cup Cheddar cheese
Preparation method
Prep: 15 mins | Cook: 50 mins | Extra time: 15 mins, resting1. Preheat oven to 350 degrees F and coat a 13×9-inch baking dish with nonstick cooking spray.
2. Pulse soup, cottage cheese, and sour cream together in a food processor for 1 minute, or until smooth.
3. Stir potatoes, garlic powder, pepper, and Canadian bacon together in a large bowl. Add the soup puree, then pour into the baking dish and top with cheese.
4. Bake for 50 minutes, then remove from oven and let the casserole rest for 15 minutes. Serve.
