Mince and leek soup recipe details
Ingredients
300 g | minced meat, beef, or beef and pork mixed |
1 large | onion, chopped |
2 tbsp | bacon, diced |
oil | |
1 stalk(s) | leek or 2 small stalks |
2 large | potatoes, peeled and quartered |
200 g | soft cheese or single cream |
2 tbsp | sour cream |
600 ml | vegetable stock |
salt and pepper | |
nutmeg |
Instructions
In a large pan, fry the onion and the bacon in oil until golden. Stir in the minced meat and cook stirring until brown and crumbly. Add the leek and cook stirring for a couple of minutes. Pour in the stock and add the potatoes. Bring to a boil and simmer for 20 minutes.Stir in the soft cheese or the cream and the sour cream and bring to the boil again. Season to taste with salt, pepper and nutmeg.
Ladle the soup into soup plates or bowls and serve hot with fresh crusty bread.
