Ingredients
Serves: 8- 2 – 8oz cans of chicken broth
- 1 – Medium butternut squash, peeled, seeded, and cubed
- 1 – Sweet Vidalia onion, minced
- 3 – Cloves of garlic, peeled and pressed
- 6 – Medium golden potatoes, peeled and cubed
- 1 tsp – Cinnamon
- 1 tsp – Nutmeg
- 1 1/2 tsp – Thyme
- 1 tsp – Cayenne Pepper
- 1 tsp – Pepper
- Pinch of Salt
Preparation method
Prep: 30 mins | Cook: 6 hours1. Place all ingredients into a slow cooker.
2. Cover and set crock pot on Low for 6 – 8 hours (For “speeder” cooking, place on High for 4 – 4 1/2 hours)
3. In the final hour of cooking use a slotted spoon and extract the chunks of butternut squash that haven’t “melted” into the soup, and mash them with a potato masher. Then return them to the crock pot for the final hour.
