A smooth infusion of the flavors of hot and nutty mixed with the creamy taste of the butternut squash cooked slowly in a crock-pot for that full blend of sensual flavors to overtake your sense of taste.
Ready in: 6 hours 30 mins

Ingredients

Serves: 8
  • 2 – 8oz cans of chicken broth
  • 1 – Medium butternut squash, peeled, seeded, and cubed
  • 1 – Sweet Vidalia onion, minced
  • 3 – Cloves of garlic, peeled and pressed
  • 6 – Medium golden potatoes, peeled and cubed
  • 1 tsp – Cinnamon
  • 1 tsp – Nutmeg
  • 1 1/2 tsp – Thyme
  • 1 tsp – Cayenne Pepper
  • 1 tsp – Pepper
  • Pinch of Salt

Preparation method

Prep: 30 mins | Cook: 6 hours

1. Place all ingredients into a slow cooker.
2. Cover and set crock pot on Low for 6 – 8 hours (For “speeder” cooking, place on High for 4 – 4 1/2 hours)
3. In the final hour of cooking use a slotted spoon and extract the chunks of butternut squash that haven’t “melted” into the soup, and mash them with a potato masher. Then return them to the crock pot for the final hour.
