Red wine and oregano gives this slow cooker stew a little hint of Italy. You don’t want to listen to the full-on accordion with this one, maybe just a little Sinatra. Inspired by papaduck’s “Italian Beef Stew.”

Ingredients

Serves: 4
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small onion, coarsely chopped
  • 2 or 3 cloves garlic, crushed
  • 1 to 1 1/2 pounds tenderized beef stew meat
  • 1/2 cup red wine
  • 1 cup warm water
  • 3 ounces tomato paste
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 3 or 4 large carrots, chopped
  • 3 or 4 medium potatoes, chopped

Preparation method

Prep: 15 mins | Cook: 8 hours

1. Melt butter with olive oil in a skillet over medium heat. Add coarsely chopped onion and crushed garlic and cook for about 5 minutes, until golden brown.
2. Add stew meat and continue cooking for 10 minutes or so until the meat is browned. Add wine, water, tomato paste, oregano, salt, and pepper. Bring to a boil.
3. Place potatoes and carrots in the bottom of a 6-quart slow cooker. Pour the beef mixture over the vegetables, cover, and cook on LOW for 8 to 10 hours.Alternate Method

Cook stew on HIGH for about 4 hours.

Tip

To thicken the stew, combine 2 tablespoons of cornstarch and 2 tablespoons of cold water in a small bowl. Slowly stir cornstarch mixture into stew with slow cooker set to HIGH, then repeat until desired thickness is reached.
