An easy brunch recipe, you just have to wait while the slow cooker does its thing. Put this on as soon as you get up, head to church or whatever you do Sunday mornings, and you’ll return to a delicious breakfast casserole.

Ingredients
Serves: 12- 1 (2 pound) package frozen cubed hash brown potatoes, thawed
- 2 cups cubed fully cooked ham
- 1 1/2 cups shredded pepper Jack cheese
- 1 green bell pepper, chopped
- 1 onion, chopped
- 12 eggs, beaten
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon black pepper
Preparation method
Prep: 15 mins | Cook: 4 hours1. Take about 1/3 of the potatoes and layer them in the bottom of a 6-quart slow cooker. Sprinkle with 1/3 of the ham, then 1/3 of the cheese, green pepper, and onion. Repeat layers until ingredients are all in the slow cooker.
2. Combine eggs, milk, salt, and pepper in a bowl. Beat together, then pour over the potato ham mixture in the slow cooker. Cook on LOW for 3 1/2 to 4 hours.
