Big chunks of beef will fill you up. But you want more: The taste of chipotle peppers for fantastic, smoky flavor.

Ingredients
Serves: 6- 2 pounds stewing beef, cut into 1/2-inch pieces
- 1/4 cup flour
- Salt and pepper
- 2 tablespoons vegetable oil
- 3 small onions, chopped
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 (28 ounce) can chopped tomatoes
- 1 cup beef stock
- 2 teaspoons pureed canned chipotle chiles
- 2 cups cooked kidney beans
Preparation method
Prep: 20 mins | Cook: 8 hours1. Place flour, salt and pepper in a large plastic resealable bag. Add beef, seal bag, and shake to coat. Remove beef.
2. Heat oil in a skillet. Cook dredged beef in hot oil for about 6 minutes, until seared. Transfer to a 6-quart slow cooker, wiping out half of the oil in the skillet.
3. In remaining hot oil, cook onions and garlic for about 5 minutes, stirring. Add to slow cooker, along with chili powder, cumin, oregano, tomatoes, stock, and chipotle pepper.
4. Cook on LOW for 8 to 10 hours, stirring occasionally.Alternate Method
Cook chili on HIGH for 3 to 4 hours.
