If you can cook bacon, you can make this simple, filling slow cooker stew. Inspired by lbart’s “Jungle Stew.”

Ingredients
Serves: 10- 1 dozen medium potatoes, cut into bite-size pieces
- 2 medium onions, chopped
- 1 pound smoked bacon, cut into 1-inch pieces
- 1 (28 ounce) can diced tomatoes
- 1 (28 ounce) can crushed tomatoes, drained
- 1 (24 ounce) can red kidney beans
Preparation method
Prep: 10 mins | Cook: 6 hours | Extra time: 5 mins1. In a skillet over medium heat, cook bacon until crisp. Drain on paper towels.
2. Combine potatoes, onions, cooked bacon, tomatoes, and beans in a 6-quart slow cooker. Cover and cook on LOW for 6 to 8 hours, stirring occasionally.Alternate Methods
Cook the stew on HIGH for about 3 hours.
