A slow cooker recipe for some traditional-style Irish corned beef and cabbage that smells as good as it tastes. Sweet potatoes added for those whose diet prefers them.

Ingredients
Serves: 8- 2 (12 ounce) cans/bottles Irish stout beer
- 4 pounds corned beef brisket (discard spice packet or save for other uses).
- 1 cup brown sugar
- 1 head of cabbage
- 2 large sweet onions
- 6 large carrots
- 3 red potatoes
- 3 sweet potatoes
Preparation method
Prep: 20 mins | Cook: 6 hours | Extra time: 5 mins, resting1. Start by pouring the first bottle of stout in the slow cooker.
2. Rinse the beef under running water and pat it dry.
3. Rub the brown sugar on the corned beef, including the bottom, and carefully place in the stout in slow cooker.
4. Add all other ingredients except the remaining beer on and around the beef in the slow cooker.
5. Slowly pour the bottle of stout beer on and around the beef and veggies to wet the sugar.
6. Cover and cook on low for 6 to 8 hours.
7. Allow to rest 5 minutes before slicing.
