- Ingredients:
- Six 8- or 10-inch unrefrigerated flour tortillas
- 9 large eggs
- 6 ounces shredded sharp cheddar cheese
- 1 small onion, chopped
- 3 medium roasted chilies, diced
- 1 Tablespoon mustard flour
- 1/2 teaspoon fresh ground black pepper
- 1/4 teaspoon salt (optional)
Instructions:
Preheat oven to 375 degrees. Using jumbo muffin pans, fold tortillas to fit each muffin hole (somewhat like an inverted cone with a flat tip). Place 1/2 of cheese in each tortilla cone. Distribute chilies and onion evenly in each one. Beat eggs; add mustard flour, pepper, and salt. Pour egg mixture evenly into each cone. Distribute remaining cheese on top of egg mixture. Bake 40 to 50 minutes until edges of tortillas are golden brown.
