Ingredients
1 | egg, beaten |
500 g | shortcrust pastry |
100 ml | dry cider |
3 tbsp | semolina flour |
450 g | potatoes, peeled and quartered |
3 tbsp | brown sugar |
300 g | ham, chopped |
2 | onions, sliced |
300 g | cooking apples, peeled, cored and sliced |
125 g | double cream |
salt and pepper | |
2 tbsp | flour |
8 sprig(s) | sage, chopped |
freshly ground nutmeg |
Instructions
Preheat the oven to 180°C.Set ¼ of the shortcrust pastry aside. Line a pie dish with the remaining rolled out shortcrust pastry. Bake for 20-25 minutes.
Cook the potatoes in salted water for 5 minutes. Add the onions and cook for 5 more minutes. Drain. Mix the potatoes with onions, flour and the cream. Season with salt, pepper, sugar and nutmeg.
Sprinkle the baked shortcrust pastry with the semolina flour. Layer in turn with the apples, the potato mixture, the sage and the ham. Repeat the procedure until the ingredients are used up. Pour over the cider.
Roll out the remaining pastry and cover the pie, trimming the edges. Make a steam hole and decorate with the trimmings. Brush the pie with the beaten egg. Bake for 60-70 minutes or until the pie is golden brown.
