Ingredients
2 | shallots, chopped |
80 g | crab paste |
100 g | crème fraîche |
2 tbsp | lemon juice |
200 g | small shrimp, cooked, chopped |
25 g | butter |
1 tbsp | flour |
600 ml | vegetable stock |
300 ml | dry white wine |
1 pinch(es) | sugar |
salt and pepper |
Instructions
In a saucepan melt the butter and sauté the shallots until lucent. Dust with the flour and cook stirring for 1-2 minutes. Pour in the stock and the wine and bring to a boil. Reduce the heat and simmer for 5 minutes.Stir in the paste and simmer for 2 more minutes. Stir in the crème fraîche and season to taste with salt, pepper, sugar and lemon juice.
Ladle the soup into individual soup bowls and divide the shrimp on top.
