Ingredients
400 g | shrimp, peeled and deveined |
3 tbsp | olive oil |
3 | onions, chopped |
4 clove(s) | garlic, chopped |
2 | tomatoes, peeled and diced |
1 can(s) | pureed tomatoes |
100 ml | dry white wine |
1 tsp | instant vegetable stock |
salt and freshly ground black pepper, to taste | |
sugar | |
fresh basil, chopped |
Instructions
In a pan, heat the oil. Sauté the garlic and the onions until lucent. Add the tomato purée, wine, stock, pepper and sugar and bring to a boil. Cook over medium heat until thickened.Preheat the oven to 200°C.
Divide the shrimp into 4 small casserole dishes. Cover with the sauce and bake for 15 minutes. Serve sprinkled with fresh basil.
