Ingredients
175 g | self-raising flour |
100 g | butter, cubed |
75 g | caster sugar |
1 medium | eggs, yolk only |
1 tbsp | water |
Instructions
Set oven to Gas Mark 5, 190°C, 375°F.Lightly grease 2 baking trays.
In a bowl, rub butter into flour until the texture resembles fine breadcrumbs. Stir in sugar, add egg yolk and water and bring together to a soft dough.
Cut the dough in half and roll out to a rough square about about 1/8 inch or 3-4mm thick. Trim edges to straighten and cut diagonally in half. Arrange one piece so that its longest edge is towards you and use the knife to impress two lines up to the opposite corner so that you have 3 equal triangles, without cutting completely through. Repeat for the other piece.
Carefully lift the pieces onto the two baking sheets and bake for about 15 minutes until golden. Leave to cool and separate using the impressed lines as a guide.
Alternatively, if you have a biscuit cutter with a diameter of about 3½ inches or 8cm, you may cut out rounds and use those instead; bake as above. If to be used as biscuits, use a 2-2½ inch, 5 or 6cm cutter, sprinkle with extra sugar and bake as above.

The British shortcake, a crisp biscuit often coated with sugar should not be confused with shortbread or American shortcake, they are both very different.
