Ingredients
120 g | butter, softened |
50 g | caster sugar |
170 g | flour |
For the red icing: | |
230 g | butter, softened |
130 g | powdered sugar |
1 tsp | vanilla extract |
red food colouring | |
For the white icing: | |
230 g | butter, softened |
130 g | powdered sugar |
1 tsp | vanilla extract |
For santa face decoration: | |
marzipan | |
currants, to decorate |
Instructions
Cream together butter and sugar, add flour and knead until smooth.
Roll out the dough on a floured work surface.
Stamp out ten 5.5 cm rounds. Make a hole with a skewer about 0.5 cm from the edge. Bake in the oven at 150°C for about 25 minutes; cool.
Red icing:
In a mixing bowl, beat the butter on low speed with a hand mixer until it becomes light and fluffy. Add the vanilla and mix until combine. Add the powdered sugar in batches and mix until fully combined. Add enough red food colouring until you have a nice Chrismassy red.
White icing:
In a mixing bowl, beat the butter on low speed with a hand mixer until it becomes light and fluffy. Add the vanilla and mix until combine. Add the powdered sugar in batches and mix until fully combined.
Use thick red icing to make the hat and white to make the beard. Use marzipan for the nose and mouth and currants for the eyes.
