Ingredients
2 | onions, chopped |
1 | carrot, diced |
1 | turnip, diced |
1 | parsnip, diced |
salt and freshly ground black pepper | |
250 g | beef brisket |
200 g | boned shoulder of lamb |
200 g | chicken thigh, boned |
200 g | leg of duck, boned |
1 ½ l | water |
700 g | cabbage, shredded |
3 | bay leaves |
10 | black peppercornns |
1 tsp | dried marjoram |
1 tbsp | dreid dill |
10 clove(s) | garlic, crushed |
120 ml | sour cream |
Instructions
In a large saucepan combine half of the onions, carrots, parsnips and turnip. Add the brisket. Cover with approximatel 2 litres of water, season with salt and boil for an hour. Add the remaining meat, bring to the boil again and cook for another hour or until the meat is tender. Take out the meat and set aside.Strain the stock into another saucepan and discard the vegetables. Add the cabbage to the stock and bring to a boil. Add the remaining vegetables, peppercorns and herbs and cook for 20 minutes. Cut the meat into bite-sized pieces and return into the soup. Season to taste with salt and pepper. Cover and cook over low heat for 10 minutes.
Ladle the soup into warmed soup bowls and serve with a dollop of sour cream on top.
